● 2 tomatoes, diced

● 1 cucumber, sliced

● ½ red onion, thinly sliced

● 100g feta cheese, crumbled

● A handful of Kalamata olives

● Fresh parsley & mint

● 3 tbsp Oleajoy Olive Oil

● 1 tbsp lemon juice

● Pinch of salt & black pepper


Instructions:

  1. In a bowl, mix tomatoes, cucumber, onion, olives, and herbs.
  2. Sprinkle feta on top.

  4. Drizzle the dressing over your salad and toss gently.

Ingredients (serves 4):

● 4 salmon fillets

● 3 tbsp Oleajoy Olive Oil

● 2 garlic cloves, minced

● Fresh rosemary & thyme

● Salt & pepper to taste


Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. Place salmon fillets on a baking tray lined with parchment.

  4. Sprinkle it with rosemary and thyme.
  5. Roast for 12–15 minutes until tender and flaky
